As a mom, I’ve found myself wanting quick healthy snacks. THESE are a huge winner in my book!!!! They are so healthy, have just the right amount of chocolate, and satisfy my hunger for a good while. And bonus- my two year old LOVES them and requests them often!! I love that I usually have these ingredients on hand.
•2 cups rolled oats
•1 cup peanut butter
•1 cup ground flaxseed
•1 cup mini chocolate chips
•2/3 cup honey
•2 tsp vanilla
•1 scoop chia seeds
Mix all ingredients together in a large bowl. Roll up into 1 1/2 inch balls and set on a cookie sheet.
Chill cookie sheet full of protein balls in refrigerator for 20 minutes and add to ziplock bags. Refrigerate until eaten.
*Tip: If your hands start getting really sticky while rolling up the balls, rinse in cold water and resume.
