My good friend made these tacos for me and my husband a few years ago and they are truly THE. BEST. I make this for guests all the time because 1. It makes A LOT! and 2. It is a CROWD PLEASER. Seriously. And I’ve shared the recipe with so many who love it, too! Happy Cinco de Mayo! (And my 7th wedding anniversary 😉)
Chicken:
- 4 chicken breasts
- 1 cup BBQ sauce
- 1/4 cup brown sugar
- 2 tsp garlic
Place all ingredients in crock pot and cook on low for 4-6 hours or high for 2 hours.
Quinoa Mix:
- 1 cup quinoa (cook according to package)
- 1 can corn
- 1 can black beans
- 2 Tbsp BBQ sauce
- 2 green onions
- Cilantro to taste
- 1 avocado (optional)
- 1/4 cup mozarella cheese (optional)
Mix cooked quinoa and all ingredients together in a bowl
Cilantro Lime Dressing:
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1 buttermilk ranch packet
- 2 1/2 tsp garlic
- 1 cup cilantro
- 3 tomatillos (just take the peak off and throw them in)
- 1/2 lime juice
Blend all ingredients together
We cook up a bunch of small corn tortillas and let our guests put as much chicken, quinoa mix, and dressing as they’d like on each taco. I always keep a bowl of mozzarella cheese, cilantro, and limes for garnish. You will LOVE these. Tell me if you make these because they are my favorite!!!!
